KeymasterAh, I see. What version of the STAX theme are you using?
In more recent versions of the STAX theme, the “Home” template was removed in favor of adding the blocks directly within the content during the theme setup process. Assuming this is an older version of the theme using the Home page template, I would recommend navigating to the Appearance > Editor > Templates > Home in the admin. Then, copy all the blocks on the home page template, and paste them directly into your home page content, and apply the Blank Canvas page template instead of the Home page template. This should make them accessible for Yoast SEO.

Yes, in general, I would delete pages that are not in use. After installing demo content, that content is meant to be used as a guide, but once it’s no longer necessary, we recommend deleting it.

Thanks for reaching out! Most the blocks on the home page template are core WordPress blocks. There are exceptions like the Content Slideshow and Portfolio blocks that pull content from the database into a query, in which case, there would be no custom Yoast SEO options for those blocks. However, I would recommend SEO optimizing the posts or pages individually in those cases.
Is there something specific you’re trying to optimize for SEO? Do you have any screenshots illustrating the issue? Also, this may be a support request for Yoast, since this is referring to functionality beyond the scope of the theme.

Unfortunately, the link you provided does not appear to be loading due to an SSL issue on the site. I would recommend addressing this issue with your hosting provider.
Regarding the font sizes, it would help to see the page, however you may be able to change the size of the text within the global style option of the editor under Appearance > Editor in the WP admin. The headings are most likely H2 headings.

I apologize for the delay. Upon inspecting your site, this issue is occurring because there is a hard width value defined for the search bar. My suggestion would be to hide the search bar on only mobile devices by adding the following style within the Additional CSS section of the Customizer:
@media screen and (max-width: 768px) { .header-wrapper .wp-block-search { display: none; } }
