How were your customizations added? Did you alter theme files directly, or use a plugin or child theme to make customizations? As long as you didn’t alter any theme files directly your customization should remain.
As for the manual update, you can follow these instructions:
1. Download and unzip the latest version of the theme.
2. Next, you will need an FTP program such as Transmit or Filezilla, or the File Manager within cPanel (found in your hosting account).
3. Login to your server using the FTP software or File Manager.
4. Upload the theme in to the /wp-content/themes/ directory, replacing the existing theme folder.
Navigate to Appearance > Themes and activate the theme.I hope this helps. Thanks!

Thanks for reaching out! Your host or a security plugin may be blocking updates from third party products. In which case, you may need to manually update the theme. This can accomplished by downloading the most recent theme version from your account and replacing the older version on your server.

The STAX theme should be available for download amongst your list of available downloads in your account. See attached screenshot.
The downloaded file should be a ZIP file, and you can install the theme in your WordPress dashboard by navigating to Appearance > Themes > Add New > Upload Theme.

I attached an image of what I’m viewing on your provided link. The numbers seems to be displaying for me in the quantity field, and I’m unable to locate the other section you’re referring to.
Have you cleared your caches since updating? It’s possible the issues you are experiencing are a result of cached files on your computer.

I’m afraid page speed optimization is not our specialty, and is out of the realm of support. I think you will most likely need a specialist or an SEO expert for help with this.
Also, depending on the metrics you’re using to evaluate performance, you may get wildly different results. I would recommend using GTMetrix as a tool for measuring performance as well.
I’m no expert on the matter of page speed, but in most cases images are the main source of increased page load times. You could eliminate images altogether in mobile, but it’s a matter of personal preference. Personally, I prefer to have my sites serve mobile images and a better user experience even if it means sacrificing some performance.

Yes, this should be possible by replacing the Post Date block with the ‘Post Modified Date’ block within the Index template under Appearance > Editor, https://wordpress.org/documentation/article/post-modified-date-block/

A login link was sent to your email when attempting to login. I didn’t realize your site was hosted on WordPress.com.
Upon further inspection of your screenshots, it appears you may be adding testimonials using the Testimonials custom post type. Is this the case? If so, you will need to select the appropriate post type from the block options in order for your testimonials to display.
